## Caption

One-Pot Cheesy Chicken Enchilada Skillet | Part 6 of My Cozy Weeknight Meals Series ✨

Ingredients
	•	2 cups cooked shredded chicken
	•	8 small yellow corn tortillas, cut into 1-inch pieces 
	•	1 tbsp olive oil
	•	½ onion, diced
	•	3 garlic cloves, minced
	•	1 cup frozen corn (or fresh/canned)
	•	15 oz can black beans, drained & rinsed
	•	15 oz can red enchilada sauce
	•	½ cup chicken broth or water
	•	1 tsp chicken bouillon powder
	•	1 tsp cumin
	•	½ tsp smoked paprika
	•	½ tsp chili powder
	•	½ tsp oregano
	•	½ tsp garlic powder
	•	Salt & pepper, to taste
	•	1 cup shredded Colby Jack cheese
	•	1 cup shredded mozzarella cheese

Toppings: cilantro, sour cream or Greek yogurt, avocado, jalapeños, lime wedges

Instructions
	1.	Heat olive oil in a large oven-safe skillet. Add onion and sauté ~3 minutes until softened. Stir in garlic and cook 1 more minute.
	2.	Add frozen corn, black beans, shredded chicken, and seasonings. Stir to warm through.
	3.	Pour in enchilada sauce and chicken broth. Bring to a gentle simmer.
	4.	Stir in the chopped tortilla and let them soak up the sauce for a couple of minutes.
	5.	Gently stir in ½ cup Colby Jack + ½ cup mozzarella until slightly melted into the skillet.
	6.	Sprinkle the remaining ½ cup Colby Jack + ½ cup mozzarella on top.
	7.	Place under the broiler for 2–3 minutes, until the cheese is bubbly and golden.
	8.	Garnish with cilantro, avocado, sour cream, jalapeños, and lime. Serve hot straight from the skillet.
