Italian Style Turkey Zucchini Boats ✨

Ingredients:
	•	3 medium zucchini, halved lengthwise
	•	1 lb lean ground turkey 
	•	1½ cups marinara sauce (like Rao’s or your favorite)
	•	½ cup freshly grated Parmesan cheese
	•	½ cup shredded low-moisture mozzarella
	•	4 oz mushrooms, chopped
	•	¼ medium onion, finely diced
	•	5 garlic cloves, minced
	•	1 tsp Italian seasoning
	•	1 tsp garlic powder
	•	1 tsp onion powder
	•	½ tsp crushed red pepper flakes
	•	½ tsp salt
	•	½ tsp black pepper
	•	1 tbsp butter
	•	1 tbsp avocado oil

For topping:
	•	Extra Parmesan cheese
	•	Fresh chopped parsley

Instructions:
	1.	Prep zucchini: Slice zucchini in half lengthwise. Scoop out the center flesh with a spoon (save it—don’t toss!). Sprinkle with a pinch of salt and place in a baking dish to release moisture. Set aside.
	2.	Sauté veggies: Heat avocado oil and butter in a skillet over medium heat. Add onions and cook for 2 mins. Add chopped mushrooms and the reserved zucchini flesh (finely chopped). Sauté for 5 more minutes.
	3.	Cook turkey: Add garlic, cook 30 seconds. Add ground turkey and seasonings (Italian seasoning, garlic powder, onion powder, red pepper flakes, salt, pepper). Break apart and cook until no longer pink, about 5–6 mins.
	4.	Add sauce: Stir in marinara sauce. Let it simmer 2–3 mins.
	5.	Assemble boats: Preheat oven to 350°F. Pat zucchini dry. Spoon filling into each zucchini boat. Add any extra filling around the sides. Sprinkle with mozzarella and Parmesan.
	6.	Bake: Cover with foil and bake for 35 minutes. Remove foil and broil on high for 3–4 minutes until bubbly and golden.
	7.	Garnish & serve: Top with extra Parmesan and chopped parsley. Serve hot and enjoy!
