Method/What I do:
1️⃣ Season the shit out if it with herbs and spices. The lamb can hold up to it. 
2️⃣ Wrap bones in foil to prevent burning 
3️⃣Smoke at 225-250 until lamb lamb internal temp hits 128ish. Remove from heat and rest 5 minutes.
4️⃣ Sear over direct heat flipping constantly until It hits 135. Let rest 5-10 more minutes and serve.
