1️⃣ Heat olive oil in a pan and sauté chopped white onion & garlic until soft and fragrant.⁠
2️⃣ Add mixed-color cherry tomatoes, salt, black pepper, crushed red chili flakes, and Italian seasoning.⁠
3️⃣ Cook until tomatoes soften, then gently smash them with a spoon.⁠
4️⃣ Add cooked rotini pasta (or any pasta you like) and a splash of reserved pasta water.⁠
5️⃣ Once the sauce thickens, finish with a splash of cream, generous parmesan cheese, and chopped Italian parsley.⁠
