Juicy French onion chicken smothered in rich caramelized onions and melty Gruyère cheese — a cozy, one-skillet dinner the whole family will love.

Ingredients

For the Chicken
	•	2–2½ lbs boneless, skinless chicken thighs
	•	1 tsp garlic powder
	•	1 tsp paprika
	•	1 tsp dried thyme
	•	1½ tsp seasoning salt (like Johnny’s)
	•	1 tsp black pepper
	•	1 tbsp olive oil
	•	1 tbsp butter

For the Caramelized Onion Sauce
	•	2 tbsp butter
	•	2 tbsp olive oil
	•	3 medium yellow onions, thinly sliced
	•	Pinch of salt
	•	1 tbsp balsamic vinegar
	•	1 tsp fresh thyme
	•	4 garlic cloves, minced
	•	1 tbsp flour
	•	1½ cups beef broth
	•	1–2 tsp Worcestershire sauce
	•	Salt and black pepper, to taste
	•	1½ cups shredded Gruyère cheese
	•	Chopped parsley, for garnish (optional)

How to Make It
	1.	Season chicken with garlic powder, paprika, thyme, seasoning salt, and black pepper.
	2.	Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
	3.	In the same skillet, add butter and olive oil. Add onions and a pinch of salt. Cook on medium-low for about 20 minutes, stirring occasionally.
	4.	Add balsamic vinegar and fresh thyme. Continue cooking another 15–20 minutes until onions are deeply caramelized.
	5.	Add garlic and cook 1 minute. Stir in flour, then slowly add beef broth and Worcestershire. Simmer 2–3 minutes until thickened.
	6.	Add chicken back to the skillet, spoon sauce over the top, sprinkle with Gruyère, cover, and cook until cheese is melted.

Serve over mashed potatoes, pasta, rice, or your favorite starch.
