This one-pan creamy orzo with chicken thighs is made with juicy seared chicken, tender orzo, parmesan, spinach, and a creamy sauce — all cooked together in one skillet. It’s an easy, family-friendly dinner ready in about 30 minutes.
Ingredients

For the Chicken
	•	2 lbs boneless, skinless chicken thighs
	•	1 tbsp avocado oil
	•	1 tsp garlic salt
	•	1 tsp Johnny’s seasoning salt
	•	½ tsp garlic powder

For the Creamy Orzo
	•	1 tbsp avocado oil
	•	1 tbsp unsalted butter
	•	½ medium onion, finely diced
	•	4 garlic cloves, minced
	•	1½ cups dry orzo
	•	2½–3 cups low sodium chicken broth 
	•	½ tsp garlic powder
	•	1 tsp garlic salt
	•	½ tsp Italian seasoning
	•	1 cup heavy cream
	•	1 cup grated Parmesan cheese
	•	1 large handful baby spinach

To Serve
	•	Extra grated Parmesan cheese

Instructions 
	1.	Season chicken thighs. Heat avocado oil in a large skillet over medium-high heat and sear chicken 4–5 minutes per side, until browned and cooked through. Remove and set aside.
	2.	In the same pan, melt butter. Cook onion 3 minutes until softened, then add garlic and cook 30 seconds.
	3.	Add dry orzo and cook 1–2 minutes, stirring to lightly toast.
	4.	Add 2½–3 cups water and seasonings. Bring to a simmer, cover, and cook 7–10 minutes until orzo is tender and most liquid is absorbed.
	5.	Stir in heavy cream, parmesan, and spinach until creamy and wilted.
	6.	Add chicken back to the pan, cover, and simmer 3 minutes to warm through and thicken.
	7.	Top with extra parmesan and serve warm.
Recipe Tips
	•	Add more liquid if the orzo absorbs too quickly.
	•	Sauce will thicken as it sits — loosen with water, broth, or a splash of cream.
	•	Leftovers reheat well; add a splash of water before reheating.
