## Caption

One week until the Big Game, here’s the only Chili recipe you’ll need for game day entertaining, or just a cold winter day. 

-Dice a red, yellow, and orange bell pepper (I like a medium dice on these, I like the texture that way in a hearty chili), one small yellow onion, and one jalapeño. 

-In a cold Dutch oven over medium/high heat add about a 1/2 cup of pancetta (you could also use bacon). Render down until very brown and crispy, roughly 8 mins. Remove with a slotted spoon and set aside. 

-Drizzle a bit of olive oil in the pot with the rendered fat,  add one pound of ground beef (I use 1/2 lb of ground sirloin and a 1/2 lb of ground round from my guys over caseys_market). Season liberally with kosher salt. Don’t overcrowd the pot, work in batches if you must, sear until browned beautifully. Add your spice mix; 2 tablespoons chili powder, 1/2 teaspoon black pepper, 1.5 teaspoons cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon dried mustard, 1/4 teaspoon cayenne, 1/4 teaspoon cinnamon. Mix the spices with the beef, coating entirely, and allow the spices to perfume about 1-2 mins. Remove the beef and set aside. 

-Add your veggies with a touch more olive oil, season with S/P. Sweat for 5-8 mins. Add 2 tablespoons of tomato paste and cook out for a min. Deglaze with a 12pz bottle of good Porter beer, let the alcohol cook out for 1-2 mins. Add 1.5 cups of diced tomatoes, and a good drizzle of honey. If you want to KICK up the heat add a couple chipotles in adobo. 

-Return the beef and pancetta to the pot, simmer for 45 mins to one hour. Then add one 15oz can of black beans (red or pinto beans also work great), and simmer for 15 mins. 

-Finish with avocado, freshly grated extra sharp Cheddar, and sliced scallion.
