Migas breakfast tacos w/giardiniera oil tortillas 🌮🍳

One of the only good things to come from Texas besides steveaustinbsr are breakfast tacos. I love the Chicago food scene but they are one thing that we truly lack. 

Migas tacos specifically are one of my absolute favorite things to make. A super simply taco typically made with onions, peppers, eggs, crumbled tortilla chips, and cheese all scrambled together on fresh flour tortillas.

My version uses sautéed white onion, poblano peppers, scrambled eggs, elmilagrotortillasoficial tortilla chips, and chihuahua cheese. It's topped with my giardiniera salsa for some kick, sliced avocado, and it's all atop a fresh flour tortilla made with reserved giardiniera oil tortillas give it all an extra layer of flavor and heat.

Giardiniera Oil Tortillas Recipe:

Ingredients
280g AP Flour (extra for dusting)
3g Baking powder
7g Kosher salt
50g Giardiniera oil
150g warm water

Method 
Combine and mix dry ingredients.  Add water and mix until a shaggy ball forms by hand or in a stand mixer.  Add giardiniera oil and knead until smooth, about 3-5 mins. Cover with a damp towel and rest for 30 mins.

Divide the dough into eight equal pieces. Shape each piece into a ball by rolling it with your hand against the work surface. Cover the dough balls with a clean kitchen towel while preheating a comal, griddle, or cast iron skillet to very hot and starting to smoke.

Roll each ball of dough into an 8 to 9 inch circle using a rolling pin. Cook the tortilla for about 30 seconds on each side, and flip once the tortilla is very bubbly on top.
