Italian Beef Barbacoa Crunchwrap 🔥🔥🔥

RECIPE:

Braised Italian Beef Barbacoa 
Ingredients:

3-5 lb beef chuck roast
3 tbsp Italian seasoning.
2 quarts beef stock
1 whole head of garlic, split in half
kosher salt and black pepper
3-4 tbsp cooking oil of choice 

Method.

Pat the surface of your beef dry with paper towels. Season beef liberally on all sides with salt and black pepper.  Heat oil in a Dutch oven or heavy bottom pot.  Sear beef in batches until deeply browned all around and set aside on a plate.  Deglaze pot with beef stock and whisk, making sure to get all the fond on the bottom incorporated.  Add back beef, remaining juices, Italian seasoning, 2 tsp salt, and garlic.  Cover and let braise in a 350 F oven for 3-3.5 hours or until fork tender. Let cool and shred the beef.  Strain braising liquid through mesh sieve and add to beef if needed. Adjust salt levels to taste.

Alternatively: Place seared beef and braising liquid in a crockpot on low for 5-7 hours or high for 3-4.

Braised Italian Beef Barbacoa Crunchwrap

Ingredients:
Caruso Provision’s x Tripping Billy’s mild or hot giardiniera salsa
Braised Italian Beef Barbacoa (recipe above)
10’ flour tortilla
6” flour tortilla
Corn tostada
Queso dip (storebought or homemade)
Roasted red pepper strips
Sour cream
Shredded iceberg lettuce
Diced tomatoes
Cooking oil of choice

Build:
Lay down 10” tortilla.  Spoon and spread queso in the center of the tortilla leaving a border for folding.. Top in the following order: braised beef, roasted red peppers, giardiniera salsa, and tostada. Spread sour cream on top of the tostada then lettuce and tomato. Place the smaller flour tortilla on top and tightly fold edges of the large tortilla toward the center, creating pleats. Quickly invert the crunch wraps so the pleats are on the bottom and they stay together.

In a skillet over medium heat, heat up your oil of choice. Add your Crunchwrap seam-side and cook til browned on each side.  About 2 mins per side.
