Ingredients
	•	2 tbsp unsalted butter
	•	½ medium yellow onion, finely diced
	•	4–5 garlic cloves, minced
	•	6 cups packed baby spinach
	•	8 oz cream cheese, softened
	•	1 (5.2 oz) Garlic & Fine Herbs Boursin cheese
	•	⅓ cup sour cream
	•	⅓ cup mayonnaise
	•	2 tbsp half-and-half
	•	½ tsp garlic salt, plus more to taste
	•	½ tsp black pepper
	•	½ tsp crushed red pepper flakes (optional)
	•	1 (15 oz) jar artichoke hearts, drained and finely chopped
	•	1 cup shredded mozzarella cheese, plus ½ cup for topping
	•	½ cup grated Parmesan cheese, plus ⅓ cup for topping

Instructions
	1.	Melt butter in a large skillet over medium heat. Add diced onion and cook 4–5 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.
	2.	Add spinach and cook until fully wilted and most of the moisture has cooked off, pressing it down as it softens.
	3.	Remove skillet from heat and stir in cream cheese, Boursin, sour cream, mayonnaise, and half-and-half until smooth and creamy.
	4.	Stir in garlic salt, black pepper, and red pepper flakes (if using). Fold in chopped artichokes, 1 cup mozzarella, and ½ cup Parmesan until fully combined.
	5.	Transfer mixture to a baking dish and spread evenly. Top with remaining mozzarella and Parmesan.
	6.	Bake at 375°F (190°C) for 15–20 minutes, until hot and bubbly. Broil for 1–2 minutes until golden on top.
	7.	Let rest for 5 minutes before serving so it stays creamy but holds its shape.

Tips
	•	Add a squeeze of fresh lemon juice after baking for extra brightness.
	•	Make ahead friendly: assemble, refrigerate, and bake when ready to serve.
