createaplatewithdina BANG BANG CHICKEN BOWLS are my favorite bowls to make. They are quick, flavorful, and perfect for an easy weeknight dinner. Juicy chicken, fluffy rice, crunchy veggies, and a creamy sweet-spicy bang bang sauce — so good and great for leftovers too! 

Ingredients

For the chicken
	•	2 lbs chicken tenders, cut into bite-size pieces
	•	1½ tsp garlic powder
	•	1 tsp paprika
	•	1½ tsp salt
	•	½ tsp black pepper
	•	½ tbsp avocado oil or olive oil (plus extra for the pan)

For the bang bang sauce
	•	½ cup mayonnaise
	•	½ cup sweet chili sauce
	•	2 tsp sriracha (adjust to taste)
	•	1–2 tsp rice vinegar or fresh lime juice
	•	1 tbsp honey

For the bowls
	•	2 cups uncooked short-grain white rice, cooked
	•	⅓ small red cabbage, thinly shredded
	•	1 large English cucumber, thinly sliced
	•	1½ cups julienned carrots
	•	3 green onions, chopped (for garnish)

Instructions
	1.	Prepare the rice:
Cook the rice according to package directions. Fluff and set aside.
	2.	Season the chicken:
Add the chopped chicken to a bowl and toss with garlic powder, paprika, salt, pepper, and oil until evenly coated.
	3.	Cook the chicken:
Heat a skillet over medium-high heat with a little oil. Add the chicken and cook, stirring occasionally, for about 6–8 minutes until golden and cooked through. Remove from heat.
	4.	Mix the bang bang sauce:
In a small bowl, stir together mayonnaise, sweet chili sauce, sriracha, vinegar (or lime juice), and honey until smooth. Adjust spice or sweetness as needed.
	5.	Build the bowls:
Divide rice between bowls. Top with chicken, cabbage, cucumber, and carrots. Drizzle with bang bang sauce and finish with green onions.
