Ending the Valentine’s Day Series on a sweet note 🍫 One of the first things I learned how to bake and they really couldn’t be easier!!!  Chocolate Lava Cakes: 1/2 cup milk chocolate chips 6 tablespoons salted butter, plus more for greasing the ramekins 1/3 cup granulated sugar 1/4 teaspoon salt 2 eggs plus 2 egg yolks 1/4 cup all purpose flour, plus 1-2 tablespoons for the ramekins Instructions Preheat oven to 400ºF. To a saucepan, add about 2 inches of water and place over medium heat. Once the water is simmering, place a metal bowl on top of the saucepan (ensuring it doesn't touch the water). Add the chocolate chips and 6 tablespoons of butter, whisking constantly until melted. Set aside. In a medium mixing bowl, whisk together  the sugar, eggs, and salt until well combined. Whisk in the melted chocolate-butter mixture. Add in the flour and whisk until just combined. Grease 2 6-ounce ramekins with butter. Add about 1 tablespoon of flour to each ramekin and tilt the ramekin around until the flour coats the sides completely. Knock out excess flour. Divide the chocolate batter evenly between the two ramekins and set them on a small baking sheet. Bake for about 16-20 minutes until the edges of the cakes are set but the middle is still visibly jiggly. It will continue to set after it’s removed from the oven. Let the cakes cool on the counter for 3 minutes.  Run a butter knife around the inside of each ramekin and carefully transfer them to small serving plates. (You can place a plate over the ramekin and flip it over, or carefully tip the cake into your hand and then place it on a plate.) Add powdered sugar to a mesh sieve and gently tap the edge of the sieve over the cakes. Garnish with fresh raspberries and serve immediately. #athomedatenight #valentinesday #baking #easyrecipes
