Time to let the good times ROLL, y’all.  Ingredients Dough: - 1 (1/4-oz.) pkg. instant yeast (about 2 1/4 tsp.) - 1 cup warm whole milk (110°F to 115°F) - 1/4 cup, plus 1 tsp. granulated sugar, divided - 2 large eggs, at room temperature - 1/2 cup (4 oz.) unsalted butter, melted - 1 1/4 tsp. kosher salt - 4 1/4 to 4 1/2 cups (18 1/8 oz. to 19 1/8 oz.) all-purpose flour, divided, plus more for work surface - Baking spray with flour Filling: - 2/3 cup packed light brown sugar - 1/2 cup (4 oz.) unsalted butter, at room temperature - 1 Tbsp. ground cinnamon - 1 tsp. freshly grated nutmeg - 1/4 tsp. kosher salt - 1/2 cup toasted chopped pecans (optional) Cream Cheese Icing: - 1 (8-oz.) pkg. cream cheese, softened - 1 tsp. vanilla extract - 1/4 tsp. kosher salt - 4 cups (16 oz.) unsifted powdered sugar - Purple, yellow, and green sanding sugar, for garnish (optional) Directions 1. Prepare the Dough: Stir together yeast, warm milk, and 1 teaspoon of the granulated sugar in the bowl of a stand mixer fitted with a dough hook attachment; let stand until mixture is foamy, about 5 minutes. Add eggs, butter, salt, 4 1/4 cups of the flour, and remaining 1/4 cup granulated sugar; beat on low speed just until dough is combined, about 1 minute. Increase mixer speed to medium-low; beat until a soft, tacky, elastic dough forms, 10 to 15 minutes. Add up to 1/4 cup remaining flour, 1 tablespoon at a time, as needed, if dough is too sticky. 2. Transfer Dough to a large bowl coated with baking spray, turning to grease top; cover with plastic wrap, and let stand in a warm place (75°F) until doubled in size, 1 to 1 hour, 30 minutes. 3. Prepare the Filling: Stir together brown sugar, butter, cinnamon, nutmeg, and salt in a medium bowl until well combined. Set aside. Coat a 13- x 9-inch baking dish or pan with baking spray; set aside.  4. Gently punch down Dough; roll Dough on a very lightly floured work surface into an 18- x 12-inch rectangle. Spread Filling evenly over Dough using a small offset spatula, leaving a 1/2-inch border on 1 long side. Sprinkle evenly with pecans, if using. Starting from long side without border, roll dough into a tight log, pinching seam to seal. Cut log, crosswise, into 12 equal slices (about 1 1/2 inches thick) using a floured serrated knife or unflavored dental floss. Arrange slices in prepared baking dish, cut sides up. Loosely cover using plastic wrap, and let stand in a warm place (75°F) until puffed and nearly doubled in size, 45 to 60 minutes. 5. While rolls are rising, preheat oven to 350°F. Bake in preheated oven until golden, puffed, and cooked through, 25 to 28 minutes. Let cool to room temperature on a wire rack, about 45 minutes. 6. Meanwhile, prepare the Cream Cheese Icing: Beat together cream cheese, vanilla, and salt in a medium bowl with an electric mixer on medium speed until smooth, about 1 minute. With mixer on medium-low speed, gradually add powdered sugar, beating until smooth, about 2 minutes total. Dollop and lightly spread Icing evenly onto cooled cinnamon rolls.
