All I’m sayin’ is grilling season isn’t over yet, and this recipe got me through a good deal of meal preps ;)

Chicken Satay Lettuce Wraps with Peanut Sesame Dressing (Sans Skewers):

Prep Time: 15 min
Inactive Time: 2+ hrs
Cook Time: 10-15 min

Marinade:
- 1 lb. Chicken thighs or breasts, boneless skinless
- 1/2 cup coconut milk
- 2+ garlic cloves, minced or grated
- 1 Tbs fresh ginger, minced or finely sliced
- 1 stalk lemon grass, thinly sliced
- 1 Tbs sugar
- 2 tsp curry powder
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 tsp fish sauce
- 1 Tbs sriracha (optional)

Dressing:
- 1 lime
- 2 Tbs smooth peanut butter, unsweetened
- 2 Tbs rice vinegar
- 1 tsp fish sauce
- 2 Tbs honey
- 1 Tbs toasted sesame oil (I used a chili version, but not necessary)
- 1 garlic clove, minced or grated
- 1-2 tsp sriracha (optional)

Assembly:
- 1 small head butter lettuce, leaves separated into cups
- Scallions, thinly sliced (optional)
- Chopped nuts (optional)
- Fermented Thai chili sauce (optional, recipe coming soon)

1. In a large mixing bowl, add all ingredients except chicken thighs, and whisk to combine.
2. Place chicken thighs in the marinade and stir to coat, making sure all pieces are submerged. Cover, then transfer to the fridge to marinate for 2-4 hours.
3. In the meantime, prepare the dressing. Add all ingredients into a small airtight jar with lid. Cover, then shake until well combined. Taste test and adjust as needed. Refrigerate until ready to pair.
4. When chicken is ready to grill, remove from the fridge and fire up the grill. Bring to high heat (or a steady 450°F). Grill for 10-15 minutes, flipping halfway through until thoroughly cooked, or until internal temperature reaches 165°F. Remove from heat, then allow to rest for a minutes(to help lock in juices.)
5. Meanwhile, arrange lettuce cups. Slice chicken into strips, then divide amongst lettuce cups. Return the dressing and drizzle on top or pair alongside. Finish with scallions, Thai chilis, and chopped nuts (optional). Enjoy!
