This Shrimp Scampi with Fettuccine is light, flavorful, and perfect pasta dish for a Valentine’s Day dinner at home. It’s a cozy date night dinner that feels special without being complicated, especially if you love seafood.

Ingredients

Pasta
	•	½ lb fettuccine
	•	Salted water, for boiling
	•	1 cup reserved pasta water

Shrimp
	•	1 lb colossal shrimp (13-15 count), peeled, deveined, tails removed
	•	½ tbsp extra-virgin olive oil
	•	1 tsp salt
	•	½ tsp garlic powder
	•	½ tsp paprika
	•	¼ tsp black pepper

Scampi Sauce
	•	1 tbsp extra-virgin olive oil
	•	5 tbsp unsalted butter, divided
	•	5 cloves garlic, minced
	•	¼–½ tsp crushed red pepper flakes (to taste)
	•	¾ cup dry white wine
	•	½ cup reserved pasta water
	•	Juice of ½ lemon
	•	Zest of 1 lemon
	•	1–2 tbsp chopped fresh parsley
	•	Salt, to taste

For serving
	•	Fresh parsley
	•	Finely grated Parmesan cheese (optional)

Instructions
	1.	Bring a large pot of salted water to a boil. Cook the fettuccine until al dente. Reserve 1 cup of pasta water, then drain and set aside.
	2.	Pat the shrimp dry and season with olive oil, salt, garlic powder, paprika, and black pepper.
	3.	Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the shrimp for 1–2 minutes per side, just until cooked through. Remove from the pan and set aside.
	4.	Reduce heat to medium. In the same skillet, melt 4 tablespoons butter. Add the garlic and red pepper flakes and cook for about 30 seconds, just until fragrant.
	5.	Pour in the white wine and simmer for 2–3 minutes to reduce slightly and cook off the alcohol.
	6.	Add ½ cup reserved pasta water, lemon juice, and lemon zest. Bring to a gentle simmer.
	7.	Add the cooked fettuccine and shrimp. Toss everything together until the pasta is glossy and coated. Remove from heat and add remaining 1 tablespoon butter, and parsley. Toss, taste and season with salt if needed. Add more pasta water if the sauce tightens.
	8.	Plate immediately and garnish with parsley and Parmesan, if using.
