So if I hear it’s your birthday,
You might want to expect a cake 🎂

This one was delish!!!! 

The best carrot cake recipe: 

Mix together 2 cups of all purpose flour, 2 tsp baking powder, 1 tsp baking soda, 1.5 tsp cinnamon, 1/2 tsp ground ginger, 1/4 tsp ground nutmeg and 1/2 tsp salt in a large bowl 

In a separate large bowl combine 3/4 cup of vegetable oil, 4 large eggs at room temp, 1.5 cups packed light brown sugar, 1/2 cup granulated sugar, 1/2 cup unsweetened apple sauce, 1 tsp vanilla. Once combined, add 3 cups grated carrots (300 grams) and 1 cup crushed walnuts until just combined. 

Add dry ingredients to wet ingredients and pour into 2 cake pans 

Bake at 350 for 35 minutes (until a toothpick comes out clean) 

Cream cheese frosting:

With paddle attachment in stand mixer combine 1.5 packages of cream cheese bricks (12 g) softened with 3/4 cup softened butter and whip until fluffy. About 2 minutes. Slowly add 4 cups of icing sugar and 1.5 tsp of vanilla 

Decorate and ENJOYYYYY 
I will be making this one on repeat!!!
