This pink beet pasta is my twist off the viral Boursin pasta bake bc I thought umm why not roast all together?! You can totes sub a feta block, use the DF boursincheese, or swap w ricotta

Just roast cubed beets + Boursin + garlic + oil at 400F until beets are fork tender, add milk/cream/pasta water + cottage cheese & blend until smooth

I used eatbanza chickpea pasta wheels cooked in bone broth (Barbie hot wheels vibe 😂) + cottage cheese for added fiber, protein & iron

Changing the color + shape of a preferred food are great ways you can easily add VARIETY to their plate. Helping them not get stuck on one specific mac & cheese!! Think yellow, white, green, pink, etc

Let your toddler give it a fun name and who knows, maybe beets will be the new coolest veggie 🫜
