Roasted cabbage and red onion salad with fluffy quinoa - the combo you needed! Perfect for lunch, hosting, or an easy healthy dinner. You can also turn it into a full meal by adding feta, grilled fish, or grilled chicken, and it tastes even better the next day.

Recipe:
Ingredients: 
For roasting:
1 red cabbage, cut in half and thinly sliced
1 red onion, cut in half and thinly sliced
1/2 teaspoon flaky maldon salt
4 tablespoons extra virgin olive oil

For the salad:
Handful parsley, finely chopped
Handful mint leaves, finely chopped
Handful chives, finely chopped
1 cup cooked quinoa
5 pitted dates, sliced
Handful roasted nuts, roughly chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon sumac
5 tablespoons extra virgin olive oil
Juice of 1 large lemon
1 teaspoon Dijon mustard
1 teaspoon date syrup or honey
2 garlic cloves, minced

Optional (you can choose from): 
Feta cheese, grilled salmon, or grilled chicken

Method: 
1. Preheat the oven to convection broil at 450F.
2. Place the sliced cabbage and onion on a baking pan. Season with flaky salt and olive oil.
3. Mix well and massage with your hands until slightly softened.
4. Spread evenly and roast for about 20 minutes, mixing a few times during roasting so the vegetables brown evenly.
5. In a large bowl, combine the chopped herbs, quinoa, dates, and nuts.
6. Add the roasted cabbage and onions.
7. Season with salt, black pepper, sumac, olive oil, lemon juice, garlic, Dijon mustard and date syrup.
8. Mix everything well and serve.
