This Filet Mignon is perfectly seared, basted with butter, garlic, and rosemary, and finished with a rich red wine reduction. The perfect date night dinner at home. Full recipe below.

Ingredients

Filet Mignon
• 2 (8 oz) filet mignon, 1-inch thick
• 2 tsp salt
• 1 tsp black pepper
• 1 tbsp avocado oil
• 4 tbsp unsalted butter
• 4–5 garlic cloves
• 1 rosemary sprig

Mashed Potatoes
• 1½ lbs yellow potatoes, peeled + quartered
• ⅓ cup heavy cream
• 4 tbsp butter
• 1 tsp salt

Baked Asparagus
• 1 lb asparagus
• 1 tsp oil
• 3 tbsp butter, sliced
• 1 tsp garlic powder
• ½ tsp salt, ¼ tsp pepper

Red Wine Reduction
• ½ cup red wine
• ⅓ cup beef broth
• 1 shallot, sliced
• 1 tbsp butter
• ¼ tsp salt

Instructions
	1.	Pat steaks dry and season both sides with salt and pepper. Let sit at room temperature for 20–30 minutes.
	2.	Boil potatoes until fork tender. Drain and mash with butter, heavy cream, and salt until smooth. Cover to keep warm.
	3.	Toss asparagus with oil, garlic powder, salt, and pepper. Top with sliced butter and bake at 400°F for 10–15 minutes. Set aside.
	4.	Heat avocado oil in a stainless steel or cast-iron skillet over medium heat. Sear steaks for 1 minute per side, then sear the edges. Remove and rest 5 minutes.
	5.	Reduce heat to medium-low. Add butter, garlic, and rosemary. Once the butter starts bubbling, return steaks and baste continuously, flipping every 30 seconds, until they reach your desired doneness (130°F for medium-rare). Remove and rest under foil.
	6.	In the same skillet, sauté shallots for 1–2 minutes. Add red wine and broth, simmer 6–8 minutes until reduced. Stir in butter and strain.
	7.	Serve filet mignon with mashed potatoes and asparagus, and spoon the red wine reduction over the top.
