Happy Pancake Day! 🥞 UofG graduate @Chloe Huang celebrates by making a UofG themed pancake stack, with a twist to mark our 575th year! These pancakes are a real treat, topped with a cinnamon, honey, brown sugar whipped butter!  INGREDIENTS: Pancakes- 200g Plain Flour 1tsp Baking Powder 1/2tsp Baking Soda 1tsp Salt 1 Egg 210ml Whole Milk 2tbsp White Sugar 30g Unsalted Butter, Melted Cinnamon, Honey, Brown Sugar Whipped Butter - 100g Unsalted butter, softened 2tsp Cinnamon 3tbsp Honey  2tbsp Brown Sugar  Pinch of salt STEPS: 1. Whisk together flour, baking powder, baking soda and salt in a bowl 2. In a separate large bowl, whisk together egg, milk, and sugar  3. Continuously whisk the egg mixture while slowly pouring in the melted butter 4. Add the dry ingredients and whisk until just combined. Do not over mix, the mixture should look a little lumpy (most of it will be butter which will melt in the pan later and create a lovely buttery pancake).  5. Place the mixture into the fridge while we make the whipped butter 6. Using an electronic whisk, whip the butter until light and fluffy 7. Add cinnamon, honey, brown sugar, and salt and beat until combined. Give it a taste and adjust to your liking 8. Grab your pancake batter and heat up a non-stick pan to medium heat. Brush a thin layer of butter and add a scoop of pancake batter to the middle. Leave it to cook for 2-3 minutes or until the top forms a lot of bubbles. Then gently flip to cook the other side for 1-2 minutes. Once both sides are golden, pop it onto a plate and repeat until you have a stack! 9. Top it with that whipped butter and maple syrup! CREATE DESIGNS: 1. Add a scoop of the pancake batter into a separate bowl and add your choice of food colouring 2. Mix in 1tsp of plain flour to help thicken the batter 3. Pass the mixture through a sieve to remove any clumps  4. Add to a piping bag 5. Start with very low heat on your pan 6. Cut a small hole at the tip and pipe the design onto the pan 7. Pour the pancake batter over the design then bring the heat up to medium and cook as normal (If you have a complicated design, I recommend adding the batter with a piping bag so that you have more control) #pancake #pancakeday #UofG575 #TeamUofG
