A collaboration between hellomeridian and selectidaho highlighting standout dishes across Idaho. Each feature shares exactly what to order, based on the chef’s pick, the people’s favorite, and Natalie of Hello Meridian.

For this feature, we visited one of downtown Boise’s most elevated dining experiences. saltbrushboise is intentionally designed, refined, and quietly stunning. The space sets the tone for a thoughtful, high-level dining experience from the moment you walk in.

The menu is ingredient driven and seasonally inspired, changing often to reflect what is fresh and available. There is a strong emphasis on local products and regional produce, and the intention behind each dish is clear.

The owners bring deep experience in both restaurants and wine, and the wine list reflects that. It focuses on small producers with strong farming practices and food friendly wines that pair beautifully with the menu.
