Ingredients 
250 g strong white bread flour, plus extra to bake
½ tsp sugar
3 g instant dried yeast, or 12 g fresh yeast
160 ml water, room temperature or colder
5 g salt
½ Tbsp olive oil

TOPPING
3 tomatoes 
1 onion
2 garlic cloves, peeled
1/3 bunch flat leaf parsley (Italian parsley)
1 lb minced lamb, or a mixture of lamb or beef
2 Tbsp Turkish hot red pepper paste 
1 Tbsp tomato paste
1 anaheim chili
1 red bell pepper
salt
black pepper
cumin

TO SERVE 
a few wedges of lemon
1/3 bunch flat leaf parsley (Italian parsley), thick stems discarded
2 medium tomato
1/2 onion with sumac
jalapeño slices, fresno chili slices
