Making Corey’s favorite Starbucks egg bites for the week ❤️ These little egg bites are protein-packed and endlessly customizable! You can use whatever veggies you have in the fridge like bell peppers, mushrooms, broccoli, zucchini, you name it. If you don’t feel like doing the steam bath you can totally skip it and just bake the mixture directly in a greased muffin tin. They’ll still be delish but the steam just makes them a little extra tender and custardy.

Starbucks Style Bacon & Cheddar Egg Bites

Ingredients:
8 slices of bacon
8 eggs
1 cup cottage cheese 
1/2 cup shredded cheddar cheese
1/2 tablespoon cornstarch, optional 
1/2 cup spinach, finely chopped 

Instructions:
Place your bacon in an even layer on a baking sheet lined with parchment paper or aluminum foil. Place in the cold oven then set the heat to 425 degrees. This renders the fat, giving you that melt in your mouth crispy bacon.
Check the bacon after 15 minutes, mine gets just the way I like it after exactly 20 minutes. Total time will depend on how fast your oven heats!
Once cooked, add the bacon to a paper towel lined plate to soak up any excess grease then chop the bacon into small pieces. 
Reduce the oven heat to 300 degrees.
In a blender, add the eggs, cottage cheese, cheese, cornstarch, and 1 teaspoon kosher salt and 1/4 teaspoon black pepper. Blend for 30 seconds until smooth. 
Place a greased silicone mold or muffin tin on top of a sheet pan. Add the chopped bacon and spinach to the bottom of each mold, then pour the egg mixture on top.
Place the sheet pan in the oven, then carefully pour boiling water into the sheet pan until it comes about halfway up the sides of the molds. This creates a gentle steam bath that helps the eggs cook evenly and stay tender.
Bake for about 30 minutes, or until the eggs are just set in the center.
Let cool slightly before removing from the molds.
Store in the fridge for up to 4–5 days.
