Caterina, aka thecookingmawma, shows you how to make oven baked lamb chops with Greek lemon potatoes! It’s the perfect dinner centerpiece, especially for Easter. 🐣 The lamb and potatoes are tender, flavorful, and elegant enough for a celebration, but simple enough to make right at home. Save this for your Easter menu planning!
INGREDIENTS
-serves 4-6-
1/3 cup olive oil
Juice of two, large lemons (about 1/2 cup)
Zest of one lemon
1/2 cup dry white wine (such as Pinot Grigio) 
2 tbsp honey
 1tbsp yellow mustard
5 garlic cloves, whole
1 tbsp chicken bouillon powder
3 sprigs fresh rosemary 
3 sprigs fresh thyme
1 1/2 tsp dried oregano
1 tsp salt
1/2 tsp black pepper 
6 medium  gold potatoes, peeled and sliced in 1/2 inch rounds
1/2 cup chicken broth
1 rack of lamb chops (8-10 chops, roughly ~2lbs), seasoned with 1 tbsp kosher  salt
 To serve: fresh tomatoes, tzatziki sauce, feta, and/or fresh herbs
INSTRUCTIONS
1. Preheat the oven to 400 degrees F. Run two (9x13) pieces of parchment paper under water to get them wet. Line a 9x13 baking sheet with one piece of the wet parchment paper. 
2. To a food processor or blender, add olive oil, lemon juice, lemon zest, wine, honey, yellow mustard, garlic, chicken bouillon, rosemary, thyme, oregano and salt and pepper. Blend on high until smooth, about 1 minute. 
3. To the parchment paper-lined baking sheet, add potato slices, half of the blended marinade, and chicken broth and toss well to coat. Place the seasoned lamb chops on top of the potatoes, and add the remainder of the marinade. 
4. Cover the baking sheet tightly with the second piece of wet parchment paper and then a piece of  aluminum foil. 
5. Bake covered at 400 degrees F  for 1 hour and 30 minutes. After 1 hour and 30 minutes, uncover the baking sheet and remove the foil and parchment paper. Flip lamb chops and cook for an additional 20 minutes, or until lamb is golden and the potatoes are tender and crisp. 
6. Serve with fresh tomatoes, feta, fresh herbs and/or tzatziki sauce. Enjoy!
