VIRAL SHEET PAN CHICKEN KEBABS—if you haven’t made them yet, make MY version (brought to you by toom). The spices taste just like kebabs that I grew up with and it’s made even better with toom garlic dip, which is my most favoriteeeee spread/dip ever ever! I have tried to make garlic spread myself and let me tell you, truly nothing compares to the texture and taste of Toom. It’s garlic heaven but at the same time, it’s not pungent, which I love! Chicken Kebabs
2 lbs ground chicken
1/2 yellow onion
4 garlic cloves
1 red bell pepper
2 tsp oregano
2 tsp cumin
2 tsp kosher salt
1 tsp ground black pepper
1 tsp turmeric
1/4 cup parsley

Salad
2 persian cucumbers, chopped
1/2 red onion, sliced
2 roma tomatoes, chopped
2 tb sumac
2 tb red wine vinegar
2 tb avocado oil
1 tsp kosher salt

2 cups cooked jasmine rice
1/2 cup toom spread

Preheat oven to 375F. First, make the kebabs. In a small food processor, blend the onion, bell pepper and garlic. It will be liquidy. Transfer to a bowl and use a paper towel to remove as much moisture as possible. Next, add chicken to a large bowl along with the onion/bell pepper/garlic mixture, seasonings, and parsley. Mixed very well until incorporated. Spread the chicken mixture evenly in a flat layer on a greased quarter sheet pan. Make cuts horizontally and vertically just like kebabs you see! Bake for 20 minutes, then broil for an additional 4-5 minutes until golden on top. Remove from oven, cut chicken along the horizontal lines you previously cut, to separate the kebabs. To make the salad, chop the veggies and toss with the vinegar, avocado oil, sumac and salt. Make the rice and assemble bowls, with rice on bottom, chicken on top, followed by a heaping spoonful of Toom and salad. Enjoy!
