Nature’s celery is hiding in plain sight. 

Meet the Chadron, Cirsium horridulum, aka bull thistle or Cajun celery. It might look like an intimidating weed, but in south Louisiana, we eat it!

If you strip away the leaves and the top, the hollow stem inside is entirely edible. The younger ones are the best. Slice them up, add a splash of vinegar, and a pinch of salt and pepper. I actually like it way better than regular celery in my salads!
