## Caption

The actual easiest 15 minute meal that you can probably make with ingredients you have on hand already! I served this delicious saucy peanut chicken in a rice bowl, but it would also be incredible served as a saucy noodle dish. You can’t go wrong!

Serves: 4
Total time: 15 minutes

For the ground chicken:
1 tablespoon toasted sesame oil
1 tablespoon minced garlic (I used 3 Trader Joe’s frozen garlic cubes)
1 tablespoon grated ginger (I used 3 Trader Joe’s frozen ginger cubes)
1 lb ground chicken

For the peanut sauce:*
1/2 cup creamy peanut butter
3 tablespoons low sodium soy sauce
1 tablespoon rice vinegar
2 teaspoons sriracha
Juice of 1 lime
1 tablespoon honey
1/4 cup water

For serving:
2 packets (from 1 box) Trader Joe’s frozen jasmine rice (or 3 cups cooked rice)
Sliced cucumber
Sliced scallion
Chopped cilantro 
Chopped roasted salted peanuts
Lime wedges

*Note: If you don’t want to make your own sauce, feel free to use 1 jar Trader Joe’s Thai Peanut Satay Sauce! You may need to add water in step 4 to make it more saucy.

Instructions:
Heat toasted sesame oil in a large skillet or wok over medium heat. Add the garlic and ginger and cook for about 1 minute. (If using the frozen cubes, cook until fully melted.)
Add the ground chicken to the pan and turn the heat up to medium-high. Use a wooden spoon or meat masher to break up the meat. Cook for 6-7 minutes, stirring often, until the chicken is fully cooked and starting to brown. 
While the chicken cooks, make the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sriracha, lime juice, honey, and water.
Add the sauce to the skillet and cook for 1-2 minutes until the sauce slightly thickens. If it gets too thick, stir in more water. Taste and season with more soy sauce if desired.
Cook the rice according to package directions. Add rice to shallow bowls, then top with the chicken, cucumber, scallion, cilantro, chopped peanuts, and lime wedges.
