Back in 2009, after a full beach day in the Hamptons, I decided to try to get to a specialty store before it closed for the day. loavesandfishesfoodstore was owned by Anna Pump and I knew of it from the Barefoot Contessa show. Ina and Anna were dear friends and Anna often appeared on her show. I loved the vibe and food of both!

I arrived at the store 5 minutes after they closed but they allowed me in. I wasn’t there more than 2 minutes when from out back walked Anna. I almost died but I definitely fan-girled. 

“Miss Pump, would you mind signing my cookbook? (yes... I travel with my cookbooks 🙄)and taking a photo with me?” I asked. 
“Of course”  she responded. 
She could not have been more gracious and I could not have been more happy 😊 

This recipe comes from that book, ‘Summer on a Plate’ (still a favorite of mine!) and it’s on constant rotation in my house.  It makes amazing sandwiches but the family also loves it in a baked sweet potato. However you eat it, I know you’re going to love it. 
**Also a great thing for meal prep.  You can make a batch, cool it and park it in the fridge to use later in the week.  Making most of the work already done.

BBQ Sauced Chicken

1 large onion chopped
3 cloves garlic, minced
1/4 cup olive oil
1 1/2 cups ketchup
1 cup chili sauce (I use Heinz Chili sauce which comes in a 12oz bottle)
1 cup water
3 tbls red wine vinegar
2 tbls Worcestershire sauce
2 Tbls brown sugar
1 1/2 tsp kosher salt
2 pounds skinned and boned chicken breast, cut into 1-inch
1/4 cup finely chopped fresh chives

Saute the onion and garlic in the olive oil for 5-7 minutes in a large heavy saucepan over medium heat. Stir often so it does not brown. Stir in the ketchup, chili sauce, water vinegar, Worcestershire, sugar, and salt, and let it simmer for 5 minutes. Add the chicken strips, stir to combine, cover and simmer for another 15 minutes. Add chives 

*** I usually  love to add chopped parsley  and scallions at the end.
