The holiday cookies you didn’t know you needed.🤭🎄🎅🎀Pringles Holiday Cookies: 
 
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup unsalted butter, softened
1 cup firmly packed brown sugar
½ cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 cups crushed Original Pringles (about ½ a can), plus more for sprinkling
⅔ cup milk chocolate chocolate chips
⅔ cup white chocolate chocolate chips
¼ cup mixed holiday sprinkles (optional), plus more for sprinklnig
 
Line a quarter sheet pan with parchment paper. In a medium bowl, whisk together flour, baking soda, and salt.
 
In a large mixing bowl or the bowl of a stand mixer with the paddle attachment, beat the butter on medium speed until creamy. Add the sugars, and beat on medium speed until pale and aerated, about 5 minutes. Add the eggs and vanilla and beat until well combined, scraping down the bowl if needed.
 
Add the flour and mix on low speed.. Mix until a few small streaks of flour remain. Scrape down the bowl. Add the crisps, chocolate chips, and sprinkles. Mix until just combined and no flour streaks remain.
 
Using a 1 ½-tablespoon scoop, scoop the dough into balls on the lined quarter sheet pan. Press each dough ball with more crushed Pringles and sprinkles. Refrigerate for at least 2 hours or cover and chill for up to 2 days.
 
Preheat the oven to 350F. Line two sheet pans with parchment paper.
 
Place the dough balls 2 inches apart on the baking sheet (about 8 per sheet). Bake until golden brown on the edges, 10-12 minutes, flipping and rotating sheets halfway through. Let cool on the pan for a few minutes then transfer to a wire rack to cool completely. 
 
Cookies will keep in an airtight container at room temperature for up to 1 week.
