Foraged Stellaria and Honey Donuts! 🍩🌿Decorated with the first violets and speedwell flowers of the season. You’ll also spot stellaria, yarrow, deadnettle, and bittercress greens. The recipe is below in the comments ⬇️ 
Stellaria media - or more commonly know as “Chickweed” is a staple early spring forgeable here is central Appalachia. It grows in cooler weather and loves damp soil. It has a delicate flavor that many will agree is reminiscent of corn silk. It’s been used traditionally for many purpose such as: 
Digestive and intestinal support - it’s high in fiber and may assist in the absorption of other nutrients. 
Anti-inflammatory and pain reliever
Cooling treatment for skin ailments - think burns, insect bites, rashes. It has also traditionally been used to draw out splinters. 
Kidney support - traditionally the tea is used for its diuretic properties. �Seeing the first plants start to come up personally has such an energizing and uplifting effect . Using them in a baked good is even more blissful!
