Over 15 years ago, I saw Chef Art Smith, who at the time was Oprah’s person chef,  make his famous Hummingbird Cake on her show. Apparently it was Oprahs favorite. I was immediately smitten and have been making it ever since. For some reason it reminds me of Spring and always  finds its way on my Easter dessert buffet. 

Hummingbird Cake is most often thought to be a classic Southern cake, but it more than likely originated in Jamaica where it was called a Doctor Bird Cake. It is a pineapple banana spice cake with cream cheese frosting and topped with pecans. 
It tastes similar to banana bread, with the moistness and flavor of a spice-filled carrot cake… without the carrots.

Hummingbird Cake

Cake:
3 cups all-purpose flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 cups chopped ripe bananas
1 cup drained crushed pineapple
1cup vegetable oil
2 large eggs , beaten
1 1/2 tsp vanilla extract
2 cup chopped pecans/divided 

Preheat oven to 350F. Spray two 9” round cake pans with cooking spray.
Whisk the flour, sugar, baking soda, cinnamon and salt into a small bowl. In a large bowl, whisk the bananas, pineapple, oil, eggs and vanilla until combined. Add the dry to the wet ingredients and fold together with a large spatula just until smooth. Do not beat. Fold in 1 cup of pecans. Spread evenly into the pans.

Bake until the cakes are done in the center, about 30 to 35 minutes. Transfer the cakes to wire racks and cool for 10 minutes.  Frost with the icing and sprinkle with remaining chopped pecans. 

Frosting: 
2 (8-ounce) packages softened cream cheese 
1/2 cup softened butter 
2 tsp vanilla extract
1 cup powdered sugar, sifted
 
In a bowl beat cream cheese and butter until smooth. Add vanilla, then slowly incorporate powdered sugar. Scrape down the sides of the bowl frequently to prevent lumps. Mix until smooth

( I actually baked mine in a 10” round cake pan. It took nearly an hour. You can also make a 13x9 or cut cakes by just adjusting the baking time)
