These crisp, buttery Chinese Almond Cookies symbolize luck and prosperity—perfect for ringing in the new year! 🎊🍊 Here’s a simple recipe to share with loved ones:

🥢 Ingredients:
• 1 cup unsalted butter, softened 
• 1 ¼ cups almond flour 
• 1 egg 
• 1 tsp almond extract 
• 1 tsp vanilla extract 
• 1 ½ cups all-purpose flour 
• 1 cup caster sugar 
• ½ tsp baking soda 
• ¼ tsp salt 
• sliced almonds (for topping) 
• 1 egg (for egg wash) 

🥢 Directions:
1️⃣ Beat butter and almond flour until pale and smooth (2-3 min). 
2️⃣ Mix in egg, vanilla extract, and almond extract. 
3️⃣ Add flour, sugar, baking soda, and salt. Mix until combined. 
4️⃣ Wrap dough and chill for at least 2 hours. 
5️⃣ Preheat oven to 170°C (340°F) and line a baking tray. 
6️⃣ Roll 2 tbsp of dough into balls, flatten, brush with egg wash, and top with an almond. 
7️⃣ Bake for 11-13 min until golden. Cool on a wire rack. 

✨Tip: Don’t overbake, or they’ll turn hard like biscuits!
