Loaded Hashbrown Breakfast Bake 🍳
This Loaded Hashbrown Breakfast Bake is one of those recipes that makes mornings way easier 👏🏼 Cheesy hash browns, sausage, bacon, peppers seasoned with my favorite simplyorganicfoods seasonings, eggs, and lots of cheddar all baked together in one pan. Perfect for feeding a crowd or prepping ahead for the week!! 
INGREDIENTS:
* 2 tbsp olive oil
* 1 onion, diced
* 1 red bell pepper, diced
* 1 green bell pepper, diced
* 1 tbsp Simply Organic garlic powder
* 1 tbsp Simply Organic onion powder
* 1 tsp Simply Organic paprika
* 1 tsp Simply Organic oregano
* 1 tsp salt
* 1 tsp Simply Organic pepper
* 1lb ground breakfast sausage
* 6oz bacon, cooked
* 30oz shredded hash browns, thawed
* 8 eggs
* 1 1/4 cups milk
* 2 cups shredded cheddar cheese
* Green onion to garnish
DIRECTIONS:
1. Preheat the oven to 400°F. Place the bacon on a sheet pan and bake for ~15 minutes. Remove from the oven, chop, and set aside.
2. Reduce oven to 375°F and grease a 9×13 baking dish with oil. Allow the hash browns to thaw if still frozen.
3. Heat olive oil in a large skillet over medium heat. Add the onion, bell peppers, salt, and pepper and sauté for 3–5 minutes, until softened.
4. Push the vegetables to the sides of the pan and add the breakfast sausage to the center. Cook until browned & mix everything together
5. Whisk together the eggs, milk, and a pinch of salt and pepper.
6. Spread the thawed hash browns evenly in the prepared baking dish. Top with the sausage & pepper mixture, then pour the egg mixture evenly over the top. Add shredded cheddar cheese and the chopped bacon.
7. Cover with foil and bake for 25 minutes. Remove the foil and continue baking for another 20–25 minutes, until the eggs are set and the top is golden.
8. Garnish with sliced green onions and enjoy!
TO MAKE AHEAD: After step 6, cover with foil and place in the refrigerator overnight (up to 24 hours). Remove from the fridge 20 minutes before baking to bring to room temperature, then bake covered for 30 minutes and uncovered for 30 minutes #SimplyOrganicPartner #Ad
