## Caption

createaplatewithdina Skip the Taco Bell drive-through and make these Chipotle Chicken Crunchwraps at home. An easy dinner with seasoned chicken, fresh toppings, and a crispy cheese crust inspired by the classic crunchwrap.

Ingredients

Chicken
• 1 lb chicken breast, diced small
• 1 packet Siete taco seasoning
• 2 tbsp oil, divided

Chipotle Sauce
• 3 chipotle peppers in adobo
• ½ cup mayonnaise
• ½ cup plain Greek yogurt
• Juice of 1 lime
• 1 tbsp hot honey
• 1 garlic clove
• Salt & pepper to taste

Crunchwraps
• 4 extra-large burrito tortillas (Mission Extra Grande)
• 4 tostada shells
• 4 small fajita tortillas
• Sour cream
• 1 romaine lettuce, shredded
• 2 Roma tomatoes, diced
• ½ bunch cilantro, chopped
• About 1½ cups shredded Colby Jack cheese

Instructions

1️⃣ Toss diced chicken with taco seasoning and 1 tbsp oil.
2️⃣ Heat remaining 1 tbsp oil in a skillet and cook chicken until fully cooked.
3️⃣ Blend chipotle peppers, mayo, Greek yogurt, lime juice, hot honey, garlic, salt and pepper until smooth.
4️⃣ On a large tortilla add chipotle sauce, ¼ of the chicken, and a tostada. Spread sour cream on the tostada, then add lettuce, tomatoes, cilantro and about 2 tbsp cheese.
5️⃣ Place a small tortilla on top and fold the large tortilla edges inward to seal.
6️⃣ Cook seam-side down in a lightly oiled skillet over medium-low heat until golden.
7️⃣ Sprinkle about 3 tbsp cheese into the skillet. Once melted and starting to crisp, place the crunchwrap seam-side up onto the cheese and cook about 1 minute until a crispy cheese crust forms. Serve warm with extra chipotle sauce.
