Key Lime Pie Possets 🍋‍🟩🥧 The cutest mini dessert that’s tangy, super smooth & silky, and adorable for St. Patrick’s Day 🍀 Plus, it’s SO easy to make with just 6 ingredients! #shamrockfarmspartner

Possets are made with an unusual process that’s actually so much easier than most puddings or custards. The main ingredient is my favorite shamrockfarmsmilk Heavy Whipping Cream, which is flavored with lime zest, sugar, and vanilla, and it thickens naturally when you combine the hot cream with lime juice!

What really makes these taste like mini key lime pies is fresh whipped cream (also made with Shamrock Farms Heavy Whipping Cream), finished with graham cracker crumbs and lime zest. It’s my absolute favorite for homemade whipped cream because it whips up faster and holds its peak longer.

Comment ‘RECIPE’ and we’ll send it to you, or save the recipe below 👇

Makes 12

1 and 1/2 cup Shamrock Farms Heavy Whipping Cream
1/4 cup granulated sugar
Pinch of salt
1/2 tsp vanilla extract
2 tsp lime zest
3 tbsp (1 1/2 oz) lime juice (freshly squeezed)
6 whole limes

To prepare your limes for serving, start by zesting the amount you need for this recipe, then slice each lime in half. Juice the limes.

Use a spoon to scoop out any remaining flesh. We used 6 limes for serving and had some leftover juice.

Add the heavy whipping cream, sugar, salt, vanilla and lime zest to a small saucepan over medium heat. Bring to a simmer, stirring often, then reduce to low and gently simmer for 5-6 minutes. (Keep a close eye on the pot as it can boil over quickly!)

Strain the hot cream through a sieve to remove the zest, then whisk in the lime juice right away. It should thicken slightly.

Pour the mixture into the lime halves (or small ramekins) and carefully transfer to the fridge for about 4 hours to set.

Optional: add 1/2 cup of Shamrock Farms Heavy Whipping Cream to a chilled bowl with 1 tbsp powdered sugar and whip until peaks form.

Top each posset with whipped cream, some crushed graham crackers and a sprinkle of lime zest. Enjoy!
