Save this for the next time you make chicken! Spatchcocking a chicken is a great way to cook a chicken quicker and more evenly. Delicious every time!
 
Using poultry shears or a sharp knife, cut alongside the backbone on both sides to remove it. Then I take it a step further and remove the kiel bone so that I can easily slice the bird into 2 halves after it is cooked.
