Colcannon is a traditional Irish potato dish and there are as many colcannon recipes as there are cooks in Ireland☘️ This is how my Mom used to make hers

It a mixture of creamy mashed potatoes and usually kale or cabbage. And while this is the perfect side dish for Patrick’s Day, it is delicious year round.

Colcannon
.
.
3-4 lbs Yukon Gold potatoes, peeled and cut into 2” pieces
Kosher salt
Freshly ground black pepper
6 tbls unsalted butter, divided
2 tbls olive oil
2 leeks, sliced in half lengthwise, thinly sliced crosswise
1/2 onion, chopped
3 garlic cloves, chopped
4 cups shredded cabbage
1 cup milk
½ cup heavy cream
3 scallion, thinly sliced
1/2 cup chopped parsley

In a large pot cover the potatoes with water and bring to a boil. Reduce and simmer until they are fork tender. Drain.
Meanwhile, while potatoes are cooking; melt 2 tbls butter and the olive oil in a large saucepan. Add onion, garlic and leeks and cook, stirring frequently, until very soft and just beginning to brown around the edges, about 10 minutes. Add the cabbage and cook, stirring constantly, until completely wilted and soft. Season with salt and pepper.

Combine the cabbage mixture, boiled potatoes, milk, cream, remaining butter, scallions, parsley and coarsely mash with a potato masher. Season with salt and pepper.
