I start with buttery Calrose Medium Grain White Rice from hinoderice because it makes everything extra creamy without even trying. Then, I add a splash of Irish Cream and let it slowly simmer. Suddenly, it’s the coziest little St. Patrick’s Day dessert. Easy,festive and delicious!

Cook time: 35-40 minutes
Servings:4 

Ingredients

• ½ cup Calrose rice
• 3 cups milk
• 1 cup heavy cream
• ⅓ cup sugar
• 1 cinnamon stick
• 2 tbsp butter
• Pinch of salt 
• ⅓ cup Baileys 
• 1 tbsp vanilla extract
• Ground cinnamon for serving
 
Instructions

In a medium saucepan, combine milk, heavy cream, sugar, cinnamon stick, butter, and salt.
Heat over medium-low until hot and steamy but not boiling. Stir occasionally so the sugar dissolves.
Stir in the rinsed Calrose rice. Bring to a very gentle simmer.
Reduce heat to low and cook for 30-40 minutes, stirring often until the rice is tender and the pudding is thick and creamy.
Remove the cinnamon stick. Stir in Baileys and vanilla after removing from heat. 
Let sit 5 minutes to thicken further. Spoon warm into bowls and dust with ground cinnamon.
