Single Serve Crispy Beef Chili 🌶️

Ingredients

For the Beef
	•	200 g beef tenderloin, thinly sliced into strips
	•	1 egg white
	•	2 tbsp cornflour (cornstarch)
	•	2 tsp sesame seeds
	•	½ tsp onion powder
	•	½ tsp garlic powder
	•	¼ tsp white pepper
	•	Salt, to taste
	•	Oil for deep frying

For the Sauce
	•	1½ tbsp oyster sauce
	•	2 tsp honey
	•	2 tsp dark soy sauce
	•	2 tsp light soy sauce
	•	2 tsp vinegar (rice vinegar preferred)
	•	1 tbsp chili flakes (adjust to spice preference)
	•	½ tsp red chili powder
	•	1 tsp cornflour mixed with 1½ tbsp water (slurry)
	•	2 tsp fresh ginger, finely chopped
	•	2 tsp garlic, minced
	•	½ tsp sesame oil

For Garnish
	•	1 spring onion, sliced
	•	1 fresh red chili, sliced
	•	½ tsp sesame seeds

To Serve
	•	1 cup steamed rice

⸻

Instructions
	1.	Marinate the beef:
In a bowl, mix beef strips with egg white, cornflour, sesame seeds, onion powder, garlic powder, white pepper, and salt to taste. Marinate for 15–20 minutes.
	2.	Fry the beef:
Heat oil in a deep pan over medium-high heat. Fry beef in batches for 2–3 minutes until golden and crispy. Remove and drain on paper towels.
	3.	Mix the sauce:
In a jar, combine oyster sauce, honey, dark soy sauce, light soy sauce, vinegar, chili flakes, chili powder, and the cornflour slurry. Shake well.
	4.	Cook aromatics:
Heat 1 tbsp oil in a pan or wok. Add ginger and garlic; sauté for about 30 seconds until fragrant.
	5.	Thicken the sauce:
Pour in the prepared sauce and cook on medium heat until thick and glossy (1–2 minutes).
	6.	Combine:
Add the crispy beef and toss quickly to coat evenly.
	7.	Finish and serve:
Drizzle sesame oil on top. Garnish with spring onions, fresh chili, and sesame seeds. Serve immediately with steamed rice.

Tip

Be careful when adding salt to the marinade — oyster sauce and soy sauces already contain salt, so adjust seasoning lightly and taste before adding more.
