🥔 Air Fryer Garlic Parmesan Accordion Potatoes

Ingredients
	•	Medium potatoes (Yukon Gold or russet)
	•	Olive oil (or melted butter, or mix of both)
	•	Garlic powder
	•	Onion powder
	•	Salt
	•	Smoked paprika
	•	Mixed dried herbs
	•	Grated Parmesan cheese
	•	Fresh chives, finely chopped
	•	Honey chipotle mayo (for serving, or sauce of choice)

Ingredients
	•	Medium potatoes (Yukon Gold or russet)
	•	Olive oil (or melted butter, or a mix of both)
	•	Garlic powder
	•	Onion powder
	•	Salt
	•	Smoked paprika
	•	Mixed dried herbs
	•	Grated Parmesan cheese
	•	Fresh chives, finely chopped
	•	Honey chipotle mayo (or sauce of choice)

Instructions
	1.	Prepare the potatoes:
Wash and dry thoroughly.
	2.	Make accordion-style slits:
	•	Place the potato between two chopsticks or wooden spoon handles (this prevents cutting all the way through).
	•	Using a sharp knife, make thin vertical slices across the potato, about ⅛ inch apart, stopping when the knife hits the chopsticks.
	•	Flip the potato over. Now slice diagonally across the potato (again about ⅛ inch apart), stopping before cutting through.
	•	This crisscross slicing allows the potato to fan out beautifully while staying intact at the base — creating the accordion effect.
	3.	Season:
Mix olive oil/butter with garlic powder, onion powder, salt, smoked paprika, and herbs. Gently fan the slices and brush the mixture generously over and inside the cuts.
	4.	Air fry:
Preheat air fryer to 375°F (190°C). Cook for 25–35 minutes, brushing with extra seasoned oil halfway, until crispy outside and tender inside.
	5.	Finish:
Sprinkle grated Parmesan on top and air fry 2–3 more minutes until slightly melted.
	6.	Garnish & serve:
Top with fresh chives and serve warm with honey chipotle mayo or any sauce of choice.

Crispy, golden, and packed with flavor.
