Muffin Batter
	•	145 g unsalted butter, melted
	•	240 g sugar
	•	2 eggs (about 100 g)
	•	180 ml buttermilk (homemade)
	•	35 g Greek yogurt
	•	12 g vanilla extract
	•	315 g all-purpose flour
	•	8 g baking powder
	•	4 g baking soda
	•	1 g salt
	•	100–120 g chocolate chips (ideally 70% cocoa)
	•	Extra chocolate chips, for topping

Method

Prepare buttermilk by mixing 180 ml warm milk with a teaspoon of vinegar. Let this sit for a while until the milk curdles.

	1.	Preheat oven to 220°C and line a muffin tray with paper liners.
	2.	In a bowl, whisk together:
	•	Flour
	•	Baking powder
	•	Baking soda
	•	Salt
	3.	In another bowl, whisk:
	•	Melted butter
	•	Sugar
	•	Eggs
	•	Buttermilk
	•	Greek yogurt
	•	Vanilla
	4.	Add the wet ingredients to the dry ingredients and mix gently until just combined.
	•	Do not overmix.
	5.	Fold in the chocolate chips.
	6.	Divide batter evenly between liners, filling each about ¾ full. 
	7.	Sprinkle extra chocolate chips on top.

Baking
	1.	Bake at 220°C for 5 minutes.
	2.	Reduce oven temperature to 180°C (do not open the oven) and bake for 15–18 minutes, until the tops are set and lightly golden.
	3.	Cool in the pan for 5 minutes, then transfer to a rack.

Yield is approximately 10 Muffins

Optional Tip
	•	For a molten fudge centre, frozen spoonfuls of chocolate fudge or ganache can be added to the centre of the batter before baking.
	•	Using 70% cocoa chocolate chips is recommended for the best balance of rich flavour and controlled melting.
