🥢 This is the most delicious and authentic Kung Pao Chicken recipe

Ingredients (serves 2-3)

Chicken (500 g):
	•	500 g chicken thighs, diced into cubes
	•	2 tsp white pepper
	•	1 tbsp rice vinegar
	•	1½ tbsp cornstarch
	•	1 egg white
	•	Salt, to taste

Sauce:
	•	2 tbsp oyster sauce
	•	2 tbsp dark soy sauce
	•	2 tbsp light soy sauce
	•	1½ tbsp vinegar
	•	2 tbsp brown sugar
	•	1 tsp black pepper
	•	1 tsp chicken powder
	•	1 tsp paprika
	•	1 tsp onion powder
	•	1 tsp Sichuan pepper (optional for heat)
	•	1½ tbsp cornstarch
	•	⅓ cup water

Stir-fry:
	•	Oil (peanut or neutral)
	•	5 cloves garlic, thinly sliced
	•	1 inch fresh ginger, thinly sliced
	•	5–6 dried red chilies
	•	White part of 2 spring onions
	•	½ cup dry roasted peanuts
	•	Green part of 2 spring onions (for garnish)
	•	1½ tbsp sesame oil (to finish)

Instructions
	1.	Marinate chicken
	•	Mix diced chicken with white pepper, rice vinegar, cornstarch, and salt. Rest 20–30 minutes.
	2.	Prepare sauce
	•	In a jar, add oyster sauce, dark soy, light soy, vinegar, brown sugar, black pepper, chicken powder, paprika, sichuan pepper, onion powder, cornstarch, and water.
	•	Seal and shake thoroughly until smooth and lump-free. Set aside.
	3.	Cook chicken
	•	Heat oil in a wok or large pan. Stir-fry chicken until golden brown and cooked through. Remove and set aside.
	4.	Aromatics
	•	In the same wok, add garlic, ginger, dried chilies, and spring onion whites. Stir-fry until aromatic.
	5.	Sauce
	•	Pour the shaken sauce mixture into the wok.
	•	Simmer until thickened and glossy, adjusting the consistency with a splash of water if needed.
	6.	Combine
	•	Return the fried chicken to the wok. Toss well in the sauce for about 1 minute.
	7.	Finish
	•	Add roasted peanuts, scallion greens, and sesame oil. Toss quickly.
	•	Turn off heat and serve hot with steamed rice.
