Dry-Aged Charcoal-Fired Beef defines Hawksmoor's approach, focusing on high-quality sourcing and precise cooking techniques. All their beef is butchered by hand and dry-aged for at least 28 to 35 days. The steaks are all cooked over live-fire charcoal at extremely high temp, creating a distinctive salty crust (using Maldon sea salt), imparting a delicate smokiness that can't be found anywhere else in NYC.
