Green is my favorite color, and when it comes to food I’m completely obsessed. This creamy Green Garden Soup is packed with asparagus, broccoli, spinach, peas, fresh dill, and chives, basically a bowl full of everything green I love. Finished with a shower of grated boiled egg for a little richness, it’s cozy, vibrant, and tastes like spring in a bowl. 💚🥣

Creamy Green Garden Soup

Serves 4
Prep time: 15 min
Cook time: 20-25 min

Ingredients

2 tablespoons butter
1 small onion, diced
3 cloves garlic, minced
1 tbsp white miso
1 bunch asparagus, trimmed and cut into pieces
2 cups broccoli florets
2 cups fresh spinach
1 cup peas (fresh or frozen)
4 cups vegetable broth
¼ cup fresh dill, chopped
¼ cup fresh chives, chopped
Salt and black pepper, to taste

To finish
2 hard-boiled eggs, finely grated
Extra dill and chives for garnish
Drizzle of olive oil

Instructions

Heat the butter in a large pot over medium heat. Add the onion and cook for about 5 minutes, until soft and translucent. Stir in the garlic and cook for another minute until fragrant. Add miso paste and keep stirring. 

Add the asparagus and broccoli and cook for 3–4 minutes to deepen their flavor. season with salt and pepper to taste.
Pour in the vegetable broth and bring to a gentle simmer. Cook for about 10 minutes, until the vegetables are tender.

Stir in the spinach and peas, dill and chives, and cook for another 2–3 minutes, just until the spinach wilts and the peas are bright green.

Blend the soup with an immersion blender (or in batches in a blender) until smooth and creamy. 

Ladle into bowls and finish with a generous sprinkle of finely grated hard-boiled egg, a few extra herbs, or your favorite toppings.
