Crispy Herb-Butter Roast Chicken with Lemon Garlic Pan Sauce

Ingredients
	•	1 whole chicken (1.5–2 kg)

Brine
	•	2–3 tbsp salt
	•	2–3 tbsp vinegar
	•	1 tbsp ginger-garlic paste
	•	~2 L water

Herb Butter
	•	3 tbsp unsalted butter, softened
	•	1 tsp salt
	•	1 tsp black pepper
	•	1½ tsp paprika
	•	1 tsp onion powder
	•	1 tsp garlic powder
	•	2 tbsp fresh cilantro, finely chopped
	•	1 tbsp fresh dill, finely chopped

Pan Base
	•	1–2 tbsp olive oil
	•	½ large lemon, sliced
	•	1 whole garlic bulb, halved
	•	2 medium onions, halved
	•	2 green chilies
	•	1–1½ cups chicken stock
	•	Handful fresh herbs (cilantro, rosemary, thyme, dill – any mix)

For garnish
	•	Fresh herbs or greens

Instructions
	1.	Brine: Mix water, salt, vinegar, and ginger-garlic paste. Submerge chicken and refrigerate 6–12 hours. Remove and pat very dry. Optional: leave uncovered in fridge 1–2 hours for extra crisp skin.
	2.	Herb Butter: Combine butter, salt, pepper, paprika, onion powder, garlic powder, cilantro, and dill.
	3.	Season Chicken: Loosen the skin over the breast and thighs. Rub most butter under the skin, then coat the outside with the remaining butter.
	4.	Prepare Pan: Heat olive oil in a cast iron skillet over medium-high heat. Add lemon slices, garlic halves, onions, and chilies. Char 2–3 minutes. Pour in chicken stock and add fresh herbs.
	5.	Roast: Place chicken breast-side up on the vegetables. Roast uncovered at 200°C (390°F) for 60–75 minutes, depending on size. Baste once or twice if desired.
	6.	Crisp the Skin: When internal temp reaches 72–74°C, switch oven to broiler/grill for 10–15 minutes until the skin is deeply golden and crispy. Do not cover the chicken during roasting.
	7.	Rest: Transfer chicken to a wire rack and rest 10–15 minutes.
	8.	Sauce: Remove herb stems and lemon from the skillet. Blend the roasted garlic, onions, chilies, and pan juices until smooth. Simmer until thickened.
	9.	Serve: Spread some sauce on a platter, place the chicken on top, drizzle more sauce over it, and garnish with fresh herbs. Serve hot.
