Episode 2 my in season cheese pairings— a refreshing spring fennel & Parmesan salad! I wanted to get this one to you guys before Easter, it is perfect for a brunch spread or just any Spring gathering! Just make sure you make a lot because I promise it’ll get devoured. If you haven’t tried fennel this is a great way to try! The salty bite of the Parmesan and peppery bite of the arugula are the perfect compliments to the fennel.

To make:
—use a mandolin to finely shave the fennel bulb
—start with an arugula base
—add on shaved fennel, lots of shaved Parmesan, red onions, walnuts and fresh mint
— for the dressing: olive oil, fresh lemon, black pepper, salt, Dijon
