Watermelon feta salad bites 🤍🍉

If you’re like me and trying to soak up every last bit of summer eating, you need to make these refreshing bites! The perfect hand held treat for an end of summer bbq! 

What you’ll need: 
🍉Watermelon (try not to use an overly ripe one)
🧀Block feta 
🥒 Cucumber
🧅 Onion 
🥭 Mango
🌶 jalapeño or garden pepper for some 🔥
🌿 Fresh mint 

—Mix your finely chopped cucumber, onion, mango, mint and jalapeño into a bowl (Add lemon juice or balsamic if desired but also good just on its own)
—Cut a 1.5 inch slice from your watermelon and use a round metal cookie cutter to make the watermelon bites. Then use a melon baller to carve out a small hole to fill in your mixture
—garnish with mint and enjoy!

** if you’re serving at a party I’d suggest assembling right before to prevent soggy ness
