Where my salad lovers at?! Summer is all about easy, fresh and light meals (in my opinion)—and this is just that! Using in season berries, salty feta and a quick vinaigrette you’ll want this all the time for lunch and dinner! ⁣
⁣
🥗 What you’ll need—⁣

⁣Pickle onions/shallots— cut up your shallot/onion, add in vinegar and salt and let it sit for 10-15 mins. I love eating shallots this way to cut the strong flavor and you can save the vinegar mixture to just keep adding more or to use for your next dressing! 

⁣ Vinaigrette dressing— good olive oil, balsamic vinegar or glaze, red wine vinegar (I like it tangy), Dijon mustard, salt & pepper. Shake it up and set aside!⁣

Toppings—⁣
Strawberries, blueberries, pecans, Feta (always get a brick and cut yourself!) & pickled shallots (game changer!)⁣
