You know how there’s side dishes you wish you could eat as a main? Well this is one of those 😋 The natural sweetness of the carrots works perfectly with the heat—You’re going to want this along side every dinner! ⁣
⁣
✨WHAT YOU’LL NEED⁣
🥕Colorful carrots ⁣
🍯 Hot honey⁣
🫒Olive oil ⁣
🧂Salt & pepper ⁣
☁️ Log of chèvre cheese ⁣
🔥Red pepper flakes ⁣
🥛Cup of greek yogurt ⁣
🌱 Thyme for garnish ⁣
⁣
✨DIRECTIONS⁣
—Cut your carrots (this will get them cooked better). Mix with salt, pepper and hot honey. ⁣
— spread out on lined baking tray and roast at 450 for 15-20 mins or until you see that nice browning start⁣
— For the whipped chèvre, in a food processor, combine your goat cheese, Greek yogurt, pepper, salt, red pepper flakes and olive oil. Pulse blend until it’s a nice smooth texture⁣
— plate your carrots in a line (so each one gets some of the yummy cheese), top with the spicy chèvre, garish with thyme and enjoy! ⁣
