Ever wonder where The Grill’s Pasta a la Presse got its name? This is it. A few years back mariocarbone took a trip down to New Orleans to track down this one-of-a-kind, original duck press in from the 19th century, which to this day is brought table-side every night at The Grill. 

The stunning antique comes into play each time the Pasta a la Presse is ordered and is wheeled over along with a pan containing roasted pheasant, squab and duck along with a few other ingredients and herbs. The mixture is inserted into the press and out comes the most fragrant, delicious jus, which is then wheeled back to the kitchen to dress the pasta. From ordering to tasting, it’s an experience for your tastebuds and your eyes…
